Muringa ela (moringa leaves) koottu curry

I came across this recipe in Vanitha magazine. It was an easy recipe and tastes good and not to forget the health benefits of muringa or  moringa leaves. A simple search on the internet can give you an idea of the health benefits associated with the whole moringa  plant. And my favourite body butter from TBS is the moringa body butter.


Ingredients:
1. Dried red chilli - 4
    Cumin - 1/2 tsp
    Coconut - 1.5 cups
2. Muringa leaves -2.5 cups
3. Turmeric powder - 1/4 tsp
4. Salt - as per taste
5. Moong dal - 1/4 cup
6. Coconut oil - 3 tbsp
    Mustard seeds - 1/2 tsp
    Urad dal - 1/2 tsp
    dried red chillies - 4

Method:
Grind together the ingredients in 1.
Cook the moong dal with a little water and keep aside
Heat a pan and add the ground paste to it. Once it just starts to boil, add the turmeric powder and muringa leaves. Give a good stir and then add the cooked moong dal. Mix everything well and remove from fire. 

In a small pan, heat the coconut oil, add the mustard seeds;wait till they splutter and then add the urad dal and the red chillies. Pour it over the moongdal+muringa ela mixture, mix well and serve with rice.

The muringa ela should not be overcooked so that it doesn't loose its nutritional value.
