A twist to the classic Waldorf salad




No.no.this is not the classic waldorf salad recipe. I just went ahead and used whatever ingredients I had at hand. But there is no compromise on the taste; I promise.



Ingredients:
1. Red apple (cored and chopped) - 1  
2. Lettuce (chopped) - 2 Cups (i used romaine lettuce)
3. Cucumber  -1
4. Avocado -1
5. Walnuts - 1/2 cup (toasted)
6. Raisins - 1/4 cup
7. Greek yoghurt - 6 tbsp (heaped)
8. Lemon juice - 2 tbsp
9. Salt - 1/2 tsp (or as per taste)
10. Pepper - 1/2 tsp 

Method
Toast the walnuts on a pan or in the oven (about 5 mins in a oven at 180 degree heat).
Drizzle the lemon juice on the cut apples. Next add in the chopped lettuce,cucumber and avocado. Add the salt and pepper. Next add the greek yoghurt. Toss well. Add the raisins and walnuts(crush with your hand). Toss well and serve.

 Since I didn't have grapes at home, I used the raisins. The thick and creamy greek yoghurt is a tasty alternative to mayonnaise; and it is packed with proteins. Also I used rock salt or pink salt (sendha namak- got from Edee bakala) instead of the regular salt.

A healthy, tasty salad or it can be even considered as a mini meal.
